Half cup basmati rice
1/2 cup Soya Chunks (dried)
1/4 cup finely chopped Carrots
1/4 cup Green Peas (fresh or frozen)
1/2 teaspoon Cumin Seeds
1 small piece of Bay Leaf
2-3 Black Peppercorns
1 small piece of Cinnamon Stick
2-3 Cloves
1 medium Onion, thinly sliced
1 Green Chilli, finely chopped
1/4 teaspoon Turmeric Powder, optional
1 tablespoons Oil or Ghee
2 tablespoons finely chopped Coriander
1. Rinse rice in water for 4-5 times and soak it in water for 10-15 minutes.
2. Rinse and soak soya chunks in hot water for about 15 minutes. After 15 minutes, it will increase their size. Drain excess water and rinse it again.
3. Heat oil or ghee in pan, add cumin seeds, black peppers, cinnamon, bay leaf, and cloves. Add sliced onion and green chillies. Saute them well.
4. Add chopped carrot and green peas, saute them for 2 to 3 minutes. Drain excess water form rice and add them to mixture. Add dried soya chunks, salt and turmeric powder. Mix everything well and saute them for 3 minutes.
5. Add one and half cup water and bring them to boil. Cook over medium flame. When its starts boiling reduce the flame and low the flame.
6. After 10 minutes, turn off flame and remove the lid and lightly fluff the rice with fork.
7. Soya bean pulao is ready.
