Mughlai Pulao

Ingredients

750 gms chicken
1 tsp red chilli powder
1 tsp lemon juice
2 tbsp cashews
2 tbsp raisins
2 tbsp pistachios
2 tbsp almonds, blanched
2 cups rice
1/2 cup onions
1 tsp ginger garlic paste
1 tsp cumin seeds
1/2 tsp fennel seeds
1 tsp coriander seeds
2 Bay leaves
1 Cinnamon stick
5 Cloves
5 Black pepper corn
2 Black cardamom
5 Green cardamom
1/2 tsp saffron

Cooking Instructions

1. Take chicken in a bowl, add salt, red chilli powder, and bit of lemon juice. Mash it together with hands to mix the chicken. Keep it aside for two hours so that it marinates.

2. Take a pan and put some ghee on it. Add pistachios, almonds, cashews and raisins. Fry all the nuts together.

3. Take another pan and put some oil and take the chicken piece into it. Fry the pieces until it turns golden brown.

4. Now put onion in another pan of oil and fry it well until it turns golden brown and add ginger-garlic paste. Now put cumin seeds, coriander seeds, and fennel seeds. Saute them until it is golden brown and put cinnamon stick, black and green cardamom , cloves, bay leaves, and salt. Stir them well. Add rice.

5. Now add water and saffron and mix them well. Put the fried chicken into pan and give it a good mix. Cover it for about 10 minutes. After it put the fried nuts into the pan and mix all ingredients thoroughly.

6. That's it! It's done. Serve it hot!
